Instructions

  1. Preheat the Oven:
    Begin by preheating the oven to 180°C (350°F) and allow it to warm for about 10 minutes.

  2. Prepare the Batter:

    • In a mixing bowl, pour in 300 ml of coconut milk.
    • Add 120 grams of Vivatta Maida (refined flour) and whisk the mixture until smooth, ensuring there are no lumps.
    • Crack two whole eggs into the batter, then add the 1/4 teaspoon of nutmeg and 1 teaspoon of vanilla extract. Whisk again until the batter is smooth and well combined.
  3. Divide the Batter:

    • Divide the batter equally into two separate bowls.
    • In one bowl, add 1 tablespoon of date syrup and whisk it in thoroughly to form a light brown batter.
    • In the other bowl, add 3 teaspoons of confectioners’ sugar and whisk until the sugar is fully dissolved, creating a smooth white batter.
  4. Prepare the Baking Dish:

    • Grease a baking dish with 2 teaspoons of hot, melted ghee to prevent the layers from sticking.
  5. Layering and Baking:

    • Pour 2 ladles of the white batter into the baking dish, spreading it evenly.
    • Bake for 5 minutes or until the layer sets.
    • Remove from the oven, then sprinkle 2 teaspoons of ghee over the baked white layer.
    • Add 2 ladles of the brown batter on top and bake for another 5 minutes.
    • Repeat this process, alternating between the white and brown batters, layering and baking each layer for 5 minutes. Continue until all the batter is used, and the dish reaches the top of the baking dish.
  6. Cool and Serve:

    • Once all layers are baked, allow the Bebinca to cool for a few minutes.
    • Flip the dessert over onto a plate and cut it into small pieces.
