Cuisine: South Indian
Course: Lunch
Diet: Vegetarian

Ingredients

Ingredient Quantity
Rice (cooked) 1 cup
Onion (finely chopped) 1 medium
Whole black pepper (crushed) 2-1/2 tbsp
Curry leaves 2 sprigs
Mustard seeds 1 tsp
White mustard seeds 1-1/2 tsp
Cashew nuts 10
Oil 2 tsp
Salt To taste

Preparation Time: 15 minutes

Cooking Time: 15 minutes

Total Time: 30 minutes

Servings: 2-3

Instructions

  1. Heat the Oil:
Start by heating 2 teaspoons of oil in a pan over medium heat.

  2. Temper the Spices:
Once the oil is hot, add the mustard seeds. Let them splutter for about 10 seconds. Then, add the urad dal and sauté it until it turns golden brown.

  3. Sauté the Onions and Curry Leaves:
Add the finely chopped onion and curry leaves to the pan. Stir it occasionally and cook until the onions soften and turn translucent.

  4. Add Cashews:
Toss in the cashew nuts and let them cook for a minute or until they lightly brown and become crunchy.

  5. Add Black Pepper and Salt:
Sprinkle in the crushed black pepper and salt. Stir everything well to combine. Let it cook for about 2 minutes to allow the flavors to meld together.

  6. Mix in the Rice:
Add the cooked rice to the pan and gently mix it in. Stir carefully to coat the rice with the tempering and spices. Let it cook for 1 more minute, allowing the rice to absorb the flavors.

  7. Serve:
Turn off the heat and transfer the Milagu Sadam to a serving dish. Serve it hot, preferably with a side of Tomato Onion Cucumber Raita and Elai Vadam for a refreshing balance of flavors.

Enjoy this delightful, spicy rice as a fulfilling lunch or a quick snack. The simplicity and bold flavors of Milagu Sadam make it an excellent go-to recipe for busy days!
