Ingredients:

Ingredient Quantity
Moringa or Drumsticks (Sahjan ki Phali) 1 Drumstick, cut into 1-inch pieces
Coconut Water (or Toddy) 300 ml
Green Chilies 3, sliced
Fresh Coriander (Cilantro) 1/4 cup, finely chopped
Ginger 1 inch, finely chopped
Cloves 4
Fresh Coconut (Grated) 3 tbsp
Turmeric Powder 1/2 tsp
Salt To taste
Ghee For cooking

Preparation Time: 20 minutes

Cooking Time: 30 minutes

Total Time: 50 minutes

Instructions:

  1. Prep the Drumsticks (Moringa):
Start by washing the drumsticks thoroughly and peeling off the skin. Cut them into small 1-inch pieces for easy cooking.

  2. Prepare the Spice Paste:
In a heated pan, lightly roast the green chilies, coriander leaves, ginger, and cloves. Allow them to cool down, and then blend the ingredients into a smooth paste using a little water if necessary.

  3. Cook the Drumsticks:
In a deep pan or kadhai, heat ghee and add the prepared drumstick pieces. Cook the drumsticks on medium heat until they soften and are slightly tender.

  4. Add the Spice Paste and Coconut Water:
Once the drumsticks are tender, add the freshly prepared spice paste along with grated coconut and coconut water (or toddy). Stir well to combine all the flavors.

  5. Simmer:
Allow the curry to simmer on low heat for about 20 minutes, letting the coconut water infuse its sweetness into the drumsticks. The spices will also meld together, creating a deliciously aromatic curry.

  6. Final Touch:
Taste and adjust the salt, adding more if necessary. Once the curry is thickened and the drumsticks are well-cooked, remove it from the heat.

  7. Serve:
Serve this flavorful Sekta Ni Sing with a warm bowl of khichdi or steamed rice for a satisfying and comforting meal.

Serving Suggestions:
This Parsi-style sweet and spicy drumsticks curry pairs exceptionally well with khichdi (a simple rice and lentil dish) or even plain steamed rice, making it a delightful lunch option for a wholesome, delicious meal. The combination of coconut water and aromatic spices will leave your taste buds craving more!
