Instructions
For the Dough:
- In a large mixing bowl, combine 3 cups of whole wheat flour, salt, and oil.
- Gradually add 2 cups of water, little by little, while mixing the flour until the dough begins to come together.
- Knead the dough for 5-7 minutes to form a smooth and soft consistency, just like chapati dough.
- Grease your hands with oil and knead the dough once more. Cover with a damp cloth and set aside to rest for 15-20 minutes.
For the Stuffing:
- While the dough is resting, prepare the vegetable stuffing. In a bowl, combine boiled and mashed potato, grated carrot, finely chopped onion, grated cauliflower, boiled and mashed green peas, chopped green chillies, and fresh coriander leaves.
- Add the dry spices: coriander powder, red chilli powder, garam masala, and salt. Mix everything together thoroughly until all the vegetables are evenly coated with the spices.
- Set the stuffing aside.
To Make the Paratha:
- Once the dough has rested, divide it into equal-sized dough balls (about the size of a golf ball).
- On a clean, floured surface, roll each dough ball into a small circle (approximately 3-4 inches in diameter), dusting with additional wheat flour to prevent sticking.
- Place a spoonful of the prepared vegetable stuffing in the center of the rolled dough.
- Carefully bring the edges of the dough together to seal the filling inside, pinching the edges to close it completely. Press gently to flatten the dough ball.
- Dust with more flour and roll out the stuffed dough ball into a larger, even circle, about 6-7 inches in diameter. Be gentle while rolling to avoid the stuffing from spilling out.
To Cook the Paratha:
- Heat a tawa or griddle over medium heat. Once hot, place the rolled paratha on the tawa.
- Let the paratha cook for 1-2 minutes until the underside starts to firm up and develop golden brown spots.
- Flip the paratha over. Brush the partially cooked side with a little ghee or oil and flip again.
- Cook the second side for 1-2 minutes, and once it is partially browned, spread a bit more ghee or oil on top and flip it one more time.
- Repeat this process 2-3 times until the paratha is golden brown and crisp on both sides.
- Remove the paratha from the tawa and place it on a serving plate.
