WeetBix Halwa Recipe
WeetBix Halwa is a delightful and quick dessert I often prepare during festivals, especially when they coincide with a busy working day. This healthy treat is not only easy to make but also packed with flavor. The recipe here is for four pieces of WeetBix, each weighing around 15 grams. If you decide to make a larger batch, simply adjust the quantities accordingly. The use of palm sugar makes this dish guilt-free, as it’s a healthier alternative to refined sugar. Additionally, the amount of ghee in this recipe is minimal, but you can always increase it if you prefer a richer taste. Soaking the almonds is essential, and if you’re pressed for time, you can skip them altogether or even use readymade almond milk to make the process faster.

Soak the Nuts (if using almonds):
Begin by soaking the almonds for 2 hours. Afterward, peel off the skin. If you’re using other mixed nuts like cashews and pistachios, soaking isn’t required. Blend the soaked almonds with saffron strands and a little less than half a cup of water. Blend until it forms a smooth paste. Set this aside. -
Prepare the WeetBix:
Take a microwave-safe bowl and brush it with a small amount of ghee. Now, crush the WeetBix biscuits by hand into smaller pieces. Add a teaspoon of ghee to the crushed WeetBix and mix it well. -
Microwave the WeetBix Mixture:
Microwave the WeetBix mixture for 30 seconds. After 30 seconds, take the bowl out, stir the mixture, and microwave for another 30 seconds. At this stage, you should start noticing a pleasant aroma. If it’s not quite there yet, continue microwaving in 30-second intervals, but don’t exceed a total of 1 minute and 30 seconds. The WeetBix should start releasing a lovely fragrance by now. -
Add the Nut and Saffron Paste:
Now, add the prepared nut and saffron paste to the microwaved WeetBix. Stir in the palm sugar, cardamom powder, and the remaining water. Mix everything thoroughly. You’ll notice that the water absorbs quickly, but don’t worry if it looks a little dry at first. -
Cook the Halwa:
Add another teaspoon of ghee on top and microwave the entire mixture for 4 minutes. Make sure to stir it every 2 minutes, adjusting the sugar if needed during these intervals. Keep an eye on the consistency, as it will thicken over time. -
Final Touches:
After 4 minutes, remove the bowl from the microwave. Add a final teaspoon of ghee to enhance the richness and flavor. Let the WeetBix Halwa sit for a few minutes, and it will naturally thicken further from the heat. -
Serve:
Serve your WeetBix Halwa either hot, warm, or chilled. It holds its consistency no matter how you choose to enjoy it. This dessert is the perfect end to a festive Diwali meal or can be a quick, satisfying treat after a light dinner like Paneer Pav Bhaji.
