Instructions:

  1. Prepare the Greased Plate:
    Start by greasing a small plate or a flat pan (around 6 to 7 inches) with ghee. Set this aside for later use.

  2. Cook the Mixture:
    In a heavy-bottomed pan, combine the hung curd (Greek yogurt) and sugar. Place the pan over low heat and gently stir until the sugar begins to melt.

  3. Add Flavorings:
    Once the sugar has melted completely, add saffron strands (if using) and chironji (or any other nuts of your choice). Continue to stir the mixture as it cooks.

  4. Evaporate the Water:
    Keep stirring the mixture continuously to avoid burning. As it cooks, the water from the yogurt will start to evaporate. After about 15 to 20 minutes of stirring, the mixture will begin to thicken and lose its liquid content.

  5. Check Consistency:
    To test if the mixture is ready, drop a small amount into a bowl of cold water. If the mixture hardens immediately and holds its shape, it’s ready to be removed from the heat.

  6. Mix in Powdered Sugar:
    Once the mixture has reached the right consistency, take the pan off the heat. Stir for a few more minutes to allow the flavors to combine and the mixture to cool slightly. Then, add the powdered sugar and mix it in thoroughly.

  7. Transfer to Greased Plate:
    Carefully transfer the mixture onto the greased plate. Use a spatula or a plastic sheet to spread the mixture evenly, smoothing the surface to form a uniform layer.

  8. Shape the Vadi:
    With a sharp knife, etch square or diamond shapes into the mixture. This will make it easier to cut into pieces once it has cooled.

  9. Cool and Cut:
    Allow the Shrikhand Vadi to cool completely, which may take 1 to 2 hours or longer. Once cool, cut it into the pre-etched shapes.

  10. Serve and Store:
    Your homemade Shrikhand Vadi is now ready to be enjoyed! Serve it fresh, or store it in an airtight container. For longer storage, refrigerate it to keep it fresh.
