Red Chilli powder 1/2 teaspoon
Black Salt (Kala Namak) 1 pinch
Lemon juice To taste
Coriander (Dhania) Leaves A small bunch, finely chopped

Instructions

  1. Prepare the Ingredients:
    Begin by gathering all the ingredients. Start by stir-frying the chopped green bell pepper (capsicum) in a pan for a couple of minutes. The bell pepper should remain crunchy for the chaat, so avoid overcooking it. Once stir-fried, remove it from the pan and set it aside.

  2. Prepare the Corn Coating:
    In a large mixing bowl, combine the sweet corn kernels, all-purpose flour (maida), corn flour, rice flour, black pepper powder, and salt. Mix well, adding a little water as needed to ensure that the corn is evenly coated with the flour and spices.

  3. Deep Fry the Corn:
    Heat enough oil in a deep frying pan (kadai) to submerge the corn. Once the oil is hot, carefully add the coated corn into the oil, scattering it evenly. Be cautious of oil splatters as the corn fries. Fry until the corn turns golden and crispy. Once done, transfer the fried corn onto a kitchen paper towel to absorb any excess oil.

  4. Prepare the Chaat:
    In a mixing bowl, combine the stir-fried green bell pepper, finely chopped onion, green chillies, sweet chutney (date and tamarind), green chutney (coriander and mint), red chilli powder, chaat masala powder, black salt, and lemon juice. Toss everything together until the ingredients are well mixed.

    Add the crispy fried corn to the mixing bowl with the chaat mixture. Toss everything gently to ensure the corn is well-coated with the chutneys and spices.
