Instructions

  1. Heat Oil: Begin by heating 1 tablespoon of oil in a pan over medium heat. Once the oil is hot, add the mustard seeds. Let them sizzle and cook for about 10 seconds.

  2. Add Curry Leaves & Chillies: After the mustard seeds start to pop, add the curry leaves and dried red chillies to the pan. Stir and let them cook for about 30 seconds, allowing the spices to release their aroma.

  3. Cook Radish Leaves: Next, add the chopped radish leaves to the pan. Stir them well and cook for 1 minute, letting the leaves soften and integrate with the spices.

  4. Add Radish: After a minute, add the chopped radish to the pan. Cook the radish on high heat for 2 minutes to give it a slightly crisp texture before reducing the heat.

  5. Spice It Up: Lower the flame and add salt, red chilli powder, and tamarind paste. Mix everything thoroughly to ensure the radish and leaves are evenly coated with the spices and tamarind paste.

  6. Simmer and Garnish: Allow the mixture to cook on low heat until the radish is tender and fully cooked through. Once done, remove the pan from the heat and garnish the sabzi with freshly grated coconut.

  7. Serve: Mooli Ki Sabzi is best enjoyed hot. Serve it with a side of garlic dal (lentils) and phulkas (soft Indian flatbreads) for a wholesome lunch.
