Instructions

Step 1: Prepare the Koftas

  1. Grate the lotus stem (except 5-6 round slices reserved for garnishing).
  2. In a mixing bowl, combine the grated lotus stem, gram flour, red chilli powder, coriander powder, ginger garlic paste, chopped coriander leaves, and salt. Mix thoroughly.
  3. Shape the mixture into 10-12 small balls.
  4. Heat oil in a frying pan and deep-fry the kofta balls until they turn golden brown. Set aside.
  5. Fry the reserved lotus stem slices until crisp for garnishing, and set aside.

Step 2: Make the Gravy

  1. Bring 3 cups of water to a boil.
  2. Add onions, ginger, garlic, cardamom pods, cloves, black peppercorns, and cinnamon stick to the boiling water. Let it boil until the water reduces to one-third of its original quantity.
  3. Allow the mixture to cool. Once cooled, grind it into a smooth paste.
  4. In a heavy-bottomed pan, heat butter and stir in the fresh cream.
  5. Add the prepared onion mixture and sauté for 10 minutes on low heat, stirring occasionally.
  6. Add the fried kofta balls to the gravy and simmer for 1-2 minutes to allow the flavors to meld.

Step 3: Prepare the Chilli Oil

  1. Heat butter in a small pan and stir in red chilli powder. Allow it to sizzle briefly.
  2. Remove from heat and let it cool.

Step 4: Garnish and Serve

  1. Transfer the kofta gravy to a serving bowl.
  2. Drizzle the prepared chilli oil over the gravy for added flavor and visual appeal.
  3. Garnish with the fried lotus stem slices and fresh mint leaves.
