Instructions

  1. Prepare the Saffron Milk
    Dissolve 3-4 saffron strands in 2 teaspoons of warm milk and set aside for later use.

  2. Prepare the Boondi Batter
    Sift the gram flour (besan) into a mixing bowl to remove any lumps or coarse bits. Gradually add water, whisking continuously to create a smooth, thick batter. Ensure there are no lumps, and the consistency is pourable but not runny. Set aside.

  3. Prepare the Sugar Syrup
    In a saucepan, combine sugar, water, and cardamom powder. Heat on low flame, stirring occasionally, until the sugar dissolves completely.   4. Fry the Boondi
    Heat oil in a deep frying pan or wok over medium heat. To test if the oil is ready, drop a small amount of batter into it. If it rises to the surface instantly, the oil is at the right temperature.

    Hold a perforated ladle over the hot oil. Pour 2-3 tablespoons of batter onto the ladle, allowing the batter to drip through the perforations into the oil. Fry the small droplets (boondis) until golden and crispy, stirring continuously to ensure even cooking.

    Use a slotted spoon to remove the fried boondis, allowing excess oil to drain. Transfer them directly into the warm sugar syrup. Repeat this process for the remaining batter.

  5. Mix the Boondis with Syrup
    Stir the fried boondis gently in the sugar syrup, ensuring they are evenly coated. Let the boondis soak in the syrup for a few minutes to absorb the sweetness.

  6. Add Flavorings
