Turmeric powder 1/4 tsp
Red chili powder 2 tsp
Coriander powder 1.5 tsp

Jaggery powder 1/2 tsp
Oil 2 tbsp
Garam masala powder A pinch

Instructions:

  1. Preparation of Raw Tomatoes:
    • Start by washing the raw tomatoes thoroughly. Once cleaned, chop them into small pieces and set them aside.
  2. Heating the Oil:
    • Heat 2 tablespoons of oil in a frying pan (or kadhai) over medium heat.
  3. Tempering the Spices:
    • Add 1 teaspoon of cumin seeds to the hot oil and let them splutter for about 10 seconds.
    • Add green chilies and curry leaves to the pan and sauté for another 10 seconds until fragrant.
  4. Cooking the Spices:
    • Next, add turmeric powder to the pan and stir it for a few seconds to infuse the flavor.
  5. Adding the Tomatoes:
    • Add the chopped raw tomatoes to the pan. Stir everything together and let the tomatoes cook for about 1 minute.
  6. Adding the Dry Spices:
    • Add red chili powder, coriander powder, and salt to the tomatoes. Mix well and let them cook for about 2 minutes.
  7. Sweetening the Sabzi:
    • After 2 minutes, add jaggery powder to the mixture. The jaggery will balance out the tangy flavor of the tomatoes and add a subtle sweetness to the dish.
  8. Final Touch:
    • Sprinkle a pinch of garam masala over the sabzi and mix well.

    • Garnish with freshly chopped coriander leaves and serve.
