Ingredients:

Tomato passata 500ml
Mozzarella cheese (cubed) 300g

Instructions:

  1. Prepare the Dough:
    Begin by dissolving the dry yeast in a little bit of warm water taken from the total amount needed. Set this aside for a few minutes to activate the yeast.

  2. Mix Dry Ingredients:
    In a large mixing bowl, combine the all-purpose flour, semolina flour, and salt.

  3. Add Yeast Mixture:
    Gradually add the water with the dissolved yeast into the flour mixture. As you pour, start mixing the ingredients together, working the dough until the flour is fully incorporated.

  4. Knead the Dough:
    Once the dough comes together, knead it in the bowl or on a flat surface for about 5-10 minutes until smooth and elastic.

  5. Let the Dough Rise:
    Lightly oil a bowl and place the dough inside. Cover the bowl with a clean kitchen towel and let it rise for about 2 hours, or until it has doubled in size.

  6. Stretch the Dough:
    After the dough has risen, uncover it and gently fold the dough in the bowl by pulling each of the four sides toward the center. Cover again and let it rest for another 2 hours.

  7. Shape the Pizza:
    Once the second rise is complete, transfer the dough onto a lightly floured surface. Divide it into four equal portions and gently roll each piece into a ball by pinching the edges underneath.

    Let the dough balls rest for 30 minutes on the counter without covering them.

    Carefully peel the parchment paper away from the pizza and flip the dough over in the skillet. Continue cooking for another 10 minutes over medium-low heat.

  14. Add the Toppings:
    Once the dough is cooked on both sides, spread a generous layer of tomato passata over the surface, followed by the cubed mozzarella.

  15. Finish Cooking:
    Cover the skillet again and cook for an additional 5 minutes to allow the cheese to melt and the crust to crisp up.

  16. Repeat for the Remaining Pizzas:
    Continue the same process for the remaining portions of dough, making each pizza in turn. Be sure to adjust the heat as needed to avoid burning the crust.

  17. Serve:
    Once all the pizzas are cooked, remove them from the skillet, slice, and enjoy your homemade skillet pizza!
