Add both the seeds and the entire pod into the milk. Warm the mixture over medium heat, bringing it to 85°C (185°F), ensuring the milk doesn’t boil.
Once the milk has reached the desired temperature, remove the saucepan from the heat and place it into a bowl of ice water. This rapid cooling helps prevent the milk from continuing to cook and preserves the delicate vanilla flavor.
Next, in a separate bowl, whisk together the egg yolks and sugar until smooth. Gradually pour in the cooled milk mixture while stirring constantly. This step ensures a creamy texture and combines the milk and egg yolk mixture.
