Instructions:

To create this indulgent creamy vanilla gelato, begin by pouring the whole milk into a saucepan. Carefully slice the vanilla bean lengthwise and scrape out the tiny seeds inside. Add both the seeds and the entire pod into the milk. Warm the mixture over medium heat, bringing it to 85°C (185°F), ensuring the milk doesn’t boil.

Once the milk has reached the desired temperature, remove the saucepan from the heat and place it into a bowl of ice water. This rapid cooling helps prevent the milk from continuing to cook and preserves the delicate vanilla flavor.

Next, in a separate bowl, whisk together the egg yolks and sugar until smooth. Gradually pour in the cooled milk mixture while stirring constantly. This step ensures a creamy texture and combines the milk and egg yolk mixture.

Now, transfer the mixture to an ice cream maker, following the manufacturer’s instructions to churn until it reaches a smooth, frozen consistency. For those without an ice cream maker, you can pour the mixture into a container, cover it with a lid, and place it in the freezer.

To achieve the perfect creamy texture, allow the gelato to freeze for at least 3 to 4 hours, but ideally, leave it overnight. The longer it freezes, the firmer and richer the gelato will be.
