Couscous with Tuna and Zucchini

Ingredients:

Canned tuna in oil 180g
Fresh basil 10 leaves

Instructions:

  1. Prepare the Zucchini:

    • Start by washing the zucchinis under running water. Trim the ends, then grate them coarsely using a large-holed grater.
  2. Cook the Zucchini and Shallots:

    • Peel and finely chop the shallot.
    • Heat a little olive oil in a large pan over medium heat, add the shallot, and sauté until it becomes soft and translucent.
    • Add the grated zucchini to the pan, season with a pinch of salt and freshly ground black pepper, and cook for about 10 minutes, stirring occasionally. Once the zucchini has softened and released some of its moisture, remove the pan from the heat and set the mixture aside.
  3. Prepare the Couscous:

    • In a medium saucepan, bring the water to a boil, adding a pinch of salt and a drizzle of olive oil.
    • Once the water is boiling, pour in the couscous, stirring to ensure all the grains are submerged. Cover the pot with a lid and let the couscous rest for about 5-6 minutes to absorb the water.
    • After the resting time, use a fork to fluff the couscous, separating the grains.
  4. Combine the Ingredients:

    • Transfer the cooked couscous into a large mixing bowl. Add the sautéed zucchini mixture along with the canned tuna (drained) and gently combine everything together.
  5. Finish the Dish:

    • Tear the fresh basil leaves by hand and sprinkle them over the couscous mixture for a fragrant finish.
    • Taste and adjust the seasoning with salt, pepper, and paprika as needed.
  6. Serve:
