  2. Prepare the Apricots
    Wash the apricots thoroughly, then slice them in half and remove the pit. Once you’ve removed all the pits, place the apricot halves in a large bowl. This step is crucial to avoid any bitterness that may come from the pits.

    Sprinkle the granulated sugar over the apricots, ensuring an even coating. Next, squeeze the juice from one lemon, straining it through a fine mesh sieve to remove any seeds and pulp.
