  1. Prepare the Avocado: Start by slicing the avocado in half and removing the pit. Scoop out the flesh, which should yield around 240g, and place it into a food processor or blender.

  2. Add Sugar: Sprinkle the sugar over the avocado flesh in the processor. Blend until the mixture becomes smooth and creamy.

  3. Melt the Chocolate: In a microwave-safe bowl, melt the dark chocolate. Place it in the microwave at 900W for about 2 minutes, stirring every 30 seconds to ensure it doesn’t burn. Once fully melted, remove the chocolate from the microwave.

  4. Combine the Mixtures: Pour the smooth avocado cream into the melted chocolate, mixing them together until thoroughly combined.

  5. Pipe the Mousse: Transfer the chocolate and avocado mixture into a piping bag fitted with a star-shaped nozzle. This will give your mousse a beautiful, textured presentation.

  6. Assemble the Dessert: Spoon the mousse into 4 small glasses or dessert cups, each with a capacity of around 100g.

  7. Garnish: Finish off by sprinkling pistachio granules and a few slivers of almonds on top of each serving to add a delightful crunch.

  8. Chill and Serve: Let the mousse rest in the refrigerator for at least an hour to firm up. Serve chilled and enjoy a healthy, yet indulgent dessert that’s perfect for any occasion.
