  2. Prepare the Belgian Endive: Rinse the Belgian endive under cold running water, ensuring it is clean. Using a sharp knife, cut each head of endive in half lengthwise. Set them aside for now.

  3. Make the Breadcrumb Topping: Take the stale bread and cut it into small cubes. Place these cubes into a food processor and pulse until they form coarse breadcrumbs. Once ready, transfer the breadcrumbs to a bowl and add the freshly grated Parmigiano Reggiano. Season the mixture with a pinch of salt, a dash of black pepper, and the oregano.
