Shrimp Tartare with Basil-Mint Sauce

Prepare the Shrimp
Ensure that the shrimp are frozen and have been deep-frozen for at least 96 hours at -18°C for safety. Defrost the shrimp before starting the recipe.
Rinse the shrimp under cold running water, then remove the heads by gently squeezing at the base and pulling them off.
Using kitchen scissors, cut along the side of the shrimp shell and peel it off. Carefully extract the shrimp meat and slice each shrimp in half.
Repeat the process for all the shrimp, then cut them into small, uniform cubes. Transfer the diced shrimp into a bowl, cover with plastic wrap, and refrigerate until ready to serve. -
Prepare the Tomatoes
Wash the cherry tomatoes under running water. Place them on a cutting board and, using a small knife, cut them into small cubes. Set aside. -
Make the Basil-Mint Sauce
Rinse the fresh basil and mint leaves under cold water. Place the basil and mint into a blender or food processor. Add the peeled garlic clove and a generous drizzle of extra virgin olive oil.
Season with salt and pepper to taste, then blend until the mixture becomes a smooth and creamy sauce. -
Assemble the Tartare
On a serving platter, spoon a small amount of the basil-mint sauce at the bottom of the plate.
Place a 7 cm (about 2.5 inches) diameter ring mold on top of the sauce. Gently fill the mold halfway with the prepared shrimp cubes, pressing them down lightly with a spoon to form a firm layer.
Add a layer of diced tomatoes on top of the shrimp.
Follow with another layer of shrimp cubes, pressing down again to compact the tartare. -
Chill and Serve
Place the assembled tartare in the refrigerator until you are ready to serve.
When ready to serve, carefully remove the mold from the tartare and garnish with freshly grated lemon zest for a bright, zesty finish.
