Instructions:

To make the Almond and Orange Truffles, start by washing the orange thoroughly and zesting a quarter of it for the flavor. While you do this, place the blanched almonds into a food processor or mixer. Add in the sugar, the orange zest, and the rum. Pulse until the mixture is well combined, ensuring that the almonds are finely chopped.

If the mixture feels too dry, add a little more fresh orange juice, just enough to bring it together into a sticky but manageable dough. Once your mixture is smooth and evenly blended, transfer it into a large bowl for easy handling.

Now, begin shaping the mixture into small, bite-sized balls. Roll each one gently between your palms to form smooth, even truffles. After shaping the truffles, roll them in sugar to coat the outside lightly, which will add a touch of sweetness and shine to each one.

Arrange the almond and orange truffles on a serving tray. For an extra pop of color, you can place them in small, decorative paper cups (optional). Allow the truffles to rest at room temperature for 2-3 hours to set and firm up before serving.
