Cooked Ham (Prosciutto cotto) 100g

Instructions:

  1. Prepare the Mushrooms:
    Begin by cleaning the Champignon mushrooms. Use a sharp, smooth-edged knife to remove the earthy part of the stem by gently scraping it away. Wipe off any remaining dirt with a cotton cloth. Once clean, slice the mushrooms.

  2. Sauté the Mushrooms:
    Heat a pan with a drizzle of extra virgin olive oil. Add the sliced mushrooms and sauté them for 3-4 minutes, stirring occasionally. Once they soften, sprinkle in the chopped parsley and cook for another minute to blend the flavors. Remove the mushrooms from the pan and set them aside.

  3. Prepare the Filling:
    Cut the prosciutto cotto into thin strips, then into small cubes. Similarly, dice the Edamer cheese into small pieces. Set aside the filling ingredients.

  4. Make the Omelette:
    In a bowl, crack open two eggs for one omelette. Season with a pinch of salt and black pepper, then whisk well with a fork or whisk. Add some of the diced prosciutto and stir to combine.

  5. Cook the Omelette:
    Heat a non-stick frying pan over medium heat and add a small amount of olive oil. Once hot, pour the egg mixture into the pan. As the eggs begin to cook, gently push the still-liquid portion to one side of the pan with a spatula.

  6. Fill the Omelette:
    When the omelette is almost set but still slightly runny on top, place a few cubes of Edamer cheese and some sautéed mushrooms on one half of the omelette.

  7. Form the Omelette:
    Tilt the pan at an angle and gently tap the handle to fold the omelette in half. For a perfect fold, the edge closest to the pan will curl up, creating a classic omelette shape. If necessary, use a spatula to help with the folding process.

  8. Serve:
    Repeat the process with the remaining ingredients, and serve the Omelette Regina hot, ideally accompanied by a fresh green salad or crusty bread.
