Bruschetta with Sautéed Mushrooms

Ingredients:

Mushrooms (porcini & champignon) 200g
Cherry tomatoes 100g
Red chili pepper ½ (optional)
Garlic clove 1
Extra virgin olive oil To taste

Instructions:

  1. Prepare the Mushrooms:

    • Clean the mushrooms by gently removing any dirt and wiping them with a damp cloth. Slice both the porcini and champignon mushrooms into thin, delicate pieces, ensuring not to break them apart.
    • Heat a pan with a drizzle of olive oil over medium heat. Add the mushrooms, season with salt, and cook for about 5 minutes, or until they become tender and slightly golden.
    • Once cooked, stir in plenty of finely chopped parsley, and set the mixture aside.
  2. Prepare the Tomatoes:

    • While the mushrooms cook, prepare the tomatoes. Rinse and cut them into quarters, placing them into a mixing bowl. Add salt, a splash of extra virgin olive oil, and if desired, finely chopped fresh chili for an extra kick.
    • Allow the tomatoes to rest for a few minutes so they release their juices, adding flavor to the mixture.
  3. Toast the Bread:

    • Slice the country-style bread into thick slices, about 1 cm each. Heat a grill pan or oven and lightly toast the bread slices for about 1-2 minutes on each side, just enough to achieve a golden color without making them overly dry.
    • While still hot, rub a garlic clove over each slice of bread, allowing the fragrance to infuse the warm toast.
  4. Assemble the Bruschette:

    • Once the mushrooms have cooled slightly, mix them with the prepared tomatoes, ensuring the juices from the tomatoes blend into the mushrooms.
    • Spoon the mushroom and tomato mixture generously over each toasted slice of bread. Garnish with additional chopped parsley, if desired.
  5. Serve:
