Savory Rose Tart
Category: Leavened Dough
Servings: 6

Ingredients:

Ingredient Quantity
Whole milk 140g
All-purpose flour 400g
Water 80g
Dry active yeast 4g
Fine salt 10g
Extra virgin olive oil 20g
Swiss chard (beet greens) 500g
Cooked ham 140g
Edamer cheese 150g
Extra virgin olive oil (for sautéing) 20g
Garlic 1 clove
Fine salt to taste
Black pepper to taste

Instructions:

Step 1: Prepare the Dough
Begin by preparing the dough. In the bowl of a stand mixer, combine the all-purpose flour and dry active yeast. Using the dough hook attachment, set the machine to a moderate speed and slowly add the room temperature milk, mixing as you go. Continue mixing until the dough begins to come together, then add the salt. Once combined, transfer the dough to a lightly floured surface and knead it by hand for a few more minutes until smooth and elastic. Shape the dough into a ball and set it aside to rise. Let it rest until it has doubled in size, which should take about an hour.

Step 2: Sauté the Swiss Chard
While the dough is rising, clean the Swiss chard. Trim the outer stalks and keep only the leafy greens. Rinse them thoroughly and set them aside. In a pan, heat 20g of extra virgin olive oil and add the garlic clove, allowing it to infuse the oil. Once the garlic becomes fragrant, add the Swiss chard. Cover the pan and let the chard cook for about 10 minutes, or until it wilts and softens. Remove the garlic and transfer the cooked chard to a colander to drain excess moisture and cool down.

Step 3: Shape the Dough
Once the dough has risen, punch it down gently to release the air. With your hands, shape it back into a ball to make it easier to work with. On a floured surface, roll the dough out into a rectangle.

Step 4: Assemble the Tart
Lay slices of cooked ham and a generous portion of sautéed Swiss chard across the center of the dough rectangle. Then, sprinkle the Edamer cheese evenly over the filling. Carefully roll the dough from the longer side to form a log shape, similar to a Swiss roll. Once rolled, slice the log into 3.5 cm thick rounds.

Step 5: Final Rise
Place the sliced rolls in a greased baking dish, arranging them in a spiral pattern, so they are close together. Allow the rolls to rise for another 30 minutes at room temperature, giving them time to puff up.

Step 6: Bake and Serve
Preheat the oven to 180°C (350°F). Bake the rose tart for about 25-30 minutes, or until golden brown on top. Once done, remove from the oven and let it cool slightly. The savory rose tart is now ready to be served!

Enjoy your delightful and savory tart, perfect for any gathering or a delicious family meal!

This savory rose tart is a fantastic blend of flavors, featuring the delicate and nutritious Swiss chard, rich ham, and melted Edamer cheese, all wrapped in soft, fluffy dough. It’s a wonderful alternative to traditional savory pastries and makes for a visually stunning and tasty dish.
