Mezze Penne Rigate 320g
Artichokes 4
Cherry Tomatoes (peeled) 400g
Water 100g
Garlic 1 clove
Fine Salt To taste
Black Pepper To taste

Instructions:

  1. Prepare the Artichokes: Start by cleaning the artichokes. First, remove the tough outer leaves and trim off the sharp tips of the leaves. Cut the tough bottom end of the stems and peel off any fibrous layer using a vegetable peeler. If there are any thorns left on the leaves, carefully remove them. Cut each artichoke in half and remove the fuzzy choke from the inside. Then, slice them into strips about 1 cm wide.

  2. Make the Sauce: In a large skillet, heat a drizzle of olive oil over medium heat. Add the whole garlic clove (peeled) to infuse the oil with flavor. Next, add the artichoke slices to the skillet. Season with salt and pepper, and sauté for about 5 minutes until the artichokes begin to soften and take on a light golden color.

  3. Add the Tomatoes: Once the artichokes have started to cook, add the peeled cherry tomatoes. Pour in the water to loosen the sauce. Let everything cook together for about 15 minutes, allowing the flavors to meld and the sauce to thicken slightly.

  4. Cook the Pasta: While the sauce is simmering, bring a large pot of salted water to a boil. Once the water is boiling, add the penne pasta and cook according to the package instructions until al dente.

  5. Combine Pasta and Sauce: Once the pasta is cooked, use a slotted spoon to transfer the penne directly into the skillet with the artichoke and tomato sauce. Stir gently to coat the pasta with the sauce and allow it to cook for a couple of minutes so the flavors can combine.

  6. Finish the Dish: Turn off the heat and finish the dish by tossing in some fresh basil leaves for added fragrance and flavor.

  7. Serve: Plate the penne with artichokes and cherry tomatoes and serve immediately, garnished with a few more basil leaves if desired.
