Salmon Fillet with Rösti and Pea Cream

Potatoes 400g
White onions ½ onion

Ground black pepper (for rösti) 1 pinch

Instructions

Step 1: Marinate the Salmon
Start by preparing the salmon fillets. In a bowl, combine the extra virgin olive oil, whole mixed peppercorns, chopped fresh thyme, and a pinch of sea salt. Stir well to combine. Remove the skin from the salmon fillets and place them in the marinade. Let the fillets marinate in the refrigerator for about 2 hours. This will allow the flavors of the spices to infuse into the fish.

Step 2: Prepare the Pea Cream
While the salmon marinates, start preparing the pea cream. In a saucepan, bring water to a boil and cook the fresh peas for a few minutes until tender. Once cooked, transfer them to a blender and add Greek yogurt, water, mint leaves, lime zest, a pinch of salt, and black pepper. Blend until smooth, then set aside the creamy pea mixture.

Step 3: Prepare the Rösti
Next, cook the potatoes in salted water until soft, about 15-20 minutes. Once cooked, allow them to cool. Peel the potatoes and then grate them using a coarse grater. Finely chop the white onion and sauté it in a pan with a little olive oil until softened. Combine the grated potatoes with the sautéed onions, then season with salt and pepper. Form the mixture into four equal discs, using a 9.5 cm diameter ring mold if you have one, to ensure uniformity.

Step 4: Cook the Rösti
In a large pan, heat the remaining 40g of olive oil over medium-high heat. Once hot, place the rösti discs into the pan and cook for about 4-5 minutes on each side, or until golden and crispy. Remove from the pan and set aside.

Step 5: Cook the Salmon
While the rösti are cooking, heat a separate pan over medium-high heat. Sear the marinated salmon fillets for 3-4 minutes on each side, depending on their thickness. The salmon should be golden on the outside but still tender and moist inside.

Step 6: Assemble the Dish
To serve, place a rösti on each plate and top it with a salmon fillet. Spoon the creamy pea mixture around the salmon and garnish with extra mint leaves or a sprinkle of lime zest if desired. Serve immediately.
