Pasta with Peppers, Sausage, and Feta

Instructions

  1. Prepare the Vegetables and Sausage:
    Start by cleaning and deseeding the yellow bell peppers. Cut them into thin strips. Next, remove the casing from the sausage and break it into small, roughly 2 cm pieces.

  2. Cooking the Sausage:
    Heat a non-stick frying pan over medium heat. Add the sausage pieces and cook until browned and fully cooked, breaking them up further as they cook.

  3. Cooking the Peppers:
    In the same pan, add the sliced yellow peppers, season with salt, and cover with a lid. Allow them to cook over low heat for about 10 minutes, until softened.

  4. Infuse with Herbs:
    While the peppers cook, add fresh sage leaves, thyme, and a few sprigs of rosemary to infuse their aroma and flavor into the vegetables.

  5. Make the Creamy Pepper Sauce:
    Once the peppers have softened, use a spoon or immersion blender to puree them into a smooth sauce. Set aside for later use.

  6. Prepare the Feta:
    Break the feta cheese into small crumbles with a knife or your hands, depending on the texture you prefer.

  7. Combine the Ingredients:
    Return the cooked sausage to the pan and heat through. Add the creamy pepper mixture, stirring to combine. If the sauce is too thick, add a small ladle of pasta cooking water to loosen it.

  8. Cook the Pasta:
    While preparing the sauce, cook the rigatoni in a large pot of salted boiling water according to package instructions, usually about 10-12 minutes. Once cooked al dente, drain, reserving some of the pasta water.

  9. Combine the Pasta and Sauce:
    Add the cooked pasta to the pan with the sausage and pepper sauce, tossing everything together. If needed, add a little more pasta water to reach your desired sauce consistency.

  10. Finish the Dish:
    Sprinkle the crumbled feta on top of the pasta, tossing gently to incorporate. Season with freshly ground black pepper and additional salt, if needed.

  11. Serve and Enjoy:
