Instructions:

  1. Prepare the Beef: Begin by cutting the beef fillet into four even medallions, each weighing approximately 200g. Wrap each medallion with two slices of pancetta. This will infuse the beef with a rich, savory flavor while it cooks.

  2. Flavor the Meat: Add a few sprigs of fresh rosemary to the pan, allowing it to infuse the meat with aromatic oils as it cooks.

  3. Sear the Medallions: Heat a skillet with a splash of extra virgin olive oil. Sear the wrapped medallions over medium-high heat, turning them occasionally until they develop a golden brown crust.
