Instructions

  1. Prepare the Almond Mixture:
    Begin by placing the almond flour into a food processor equipped with steel blades. Add the powdered sugar, zest of two lemons, and a pinch of fine salt. Pulse the mixture until it becomes a soft, yet compact dough.

  2. Shape the Dough:
    Transfer the almond mixture onto a piece of parchment paper. Gently knead the mixture with your hands to form a block. Once shaped, wrap the dough in the parchment paper and refrigerate it for a short while to allow it to firm up.

  3. Form the Truffles:
    After the mixture has chilled, remove it from the refrigerator and begin shaping it into small balls, each weighing approximately 15g. Use your hands to roll them into smooth, even shapes.

  4. Prepare for Coating:
    Lay the formed truffles onto a tray lined with parchment paper. Divide them into two separate bowls, one containing 270g of truffles and the other with 130g.

  5. Melt the White Chocolate:
    For the coating, melt 270g of white chocolate in a heatproof bowl. You can do this either by gently heating the chocolate over a double boiler or by microwaving it in short intervals, stirring between each. Heat the chocolate until it reaches 45°C (113°F). Then, add the remaining 130g of finely chopped white chocolate into the melted mixture, stirring until smooth.

    Take the chilled almond balls out of the refrigerator one by one and dip them into the melted white chocolate. Ensure each ball is completely coated in chocolate.

  7. Decorate:
    Immediately roll each chocolate-coated truffle in white sprinkles, ensuring they are evenly covered. Place the truffles back onto the parchment paper.

  8. Set the Truffles:
    Allow the truffles to sit at room temperature for about 15 minutes, letting the coating harden.
