Mixed Berry Strudel Recipe

Instructions

Step 1: Prepare the dough
Start by preparing the dough for the strudel. In a mixing bowl, combine the all-purpose flour, a pinch of salt, and the eggs. Using a fork, mix to absorb the liquid. Gradually add the sunflower oil, continuing to mix until the ingredients begin to come together. Transfer the dough onto a clean surface and knead it with your hands until it forms a smooth, homogenous dough ball.

Once kneaded, place the dough in a lightly greased bowl, cover it with plastic wrap, and allow it to rest in a cool place for about 1 hour.

Step 2: Prepare the berry filling
While the dough rests, prepare the mixed berry filling. In a separate bowl, combine the blackberries, blueberries, and raspberries. Add the brown sugar and gently toss the fruit to coat it evenly with the sugar.

Step 3: Roll out the dough
Once the dough has rested, transfer it to a clean surface and roll it out with a rolling pin to a thickness of about 1-2 mm. Carefully stretch the dough even more by gently pulling it with your hands, lengthening it.

Step 4: Assemble the strudel
Sprinkle the breadcrumbs evenly over the surface of the dough. This will help to absorb any excess moisture from the fruit as it bakes. Then, spread the berry mixture over the dough, ensuring an even layer.

Step 5: Roll and seal the strudel
Now, using a clean kitchen towel or tea towel, carefully roll the dough from the shorter side to form a cylinder. Fold in the ends of the dough to seal the strudel. Brush the top with melted butter for a golden, crispy finish.

Step 6: Bake the strudel
Place the strudel on a baking sheet lined with parchment paper and bake in a preheated static oven at 190°C (375°F) for 30-35 minutes, or until the pastry is golden and crispy.

Step 7: Cool and serve
Once the strudel is baked, remove it from the oven and allow it to cool. Once cooled, dust the top generously with powdered sugar. Slice and serve!
