Ingredients for Nadan Tomato Curry:

Ingredient Quantity
Tomatoes 5, chopped
Green chilies 2, finely chopped
Turmeric powder 1/4 tsp
Red chili powder 1/2 tsp
Salt To taste
For Tempering
Coconut oil 1 tsp
Mustard seeds 1/2 tsp
Curry leaves 1 sprig
For Grinding
Fresh coconut (grated) 1/4 cup
Cumin seeds 1 tsp
Onion 5, halved

Preparation Time: 10 minutes
Cooking Time: 20 minutes

Instructions:

  1. Start by heating coconut oil in a pan. Once the oil is hot, add mustard seeds and curry leaves. Let them splutter for a few seconds, filling your kitchen with an inviting aroma.
  2. Add the finely chopped green chilies, chopped tomatoes, turmeric powder, red chili powder, and salt to the pan. Stir everything together and cook on low heat. Allow the tomatoes to soften and release their juices, which will meld with the spices to create a rich flavor.
  3. While the tomatoes cook, prepare the ground paste by blending the fresh coconut, cumin seeds, and halved onions with half a cup of water until smooth.
  4. Once the tomatoes are tender, add the freshly ground coconut paste to the pan. Stir everything together and let it simmer for 3-4 more minutes to allow the flavors to combine.
  5. Turn off the heat and your Nadan Tomato Curry is ready to serve.
