Orange Upside-Down Cake

Instructions

  1. Prepare the Oranges:
    Begin by grating the zest from one of the oranges. Set the zest aside as it will be used in the cake batter later. Then, juice the oranges to yield 90g of fresh orange juice.

  2. Slice the Oranges:
    Wash the oranges that will be used for decoration. Slice them into approximately 1 cm thick rounds, discarding the ends. These slices will line the base of the cake for a stunning upside-down presentation.

  3. Prepare the Pan:
    Line a 24 cm (9.5-inch) round springform pan with parchment paper. Lightly grease the sides of the pan with butter. Arrange the orange slices evenly on the bottom of the pan, ensuring that the entire surface is covered.

  4. Make the Cake Batter:
    In a large mixing bowl, add the eggs and sugar. Using an electric mixer, beat them together for about 5 minutes, or until the mixture becomes fluffy and pale. Add the orange juice and continue mixing with the electric mixer until well combined.

  5. Add Dry Ingredients:
    Sift the flour and baking powder together, then add them to the bowl along with the grated orange zest. Mix everything together on a low speed, just long enough to create a smooth, uniform batter.

  6. Bake the Cake:
    Pour the batter into the prepared pan over the orange slices. Smooth the top with a spatula to ensure an even surface. Place the pan in a preheated oven at 180°C (350°F) on static heat (not fan-forced) and bake for approximately 45 minutes. The cake is ready when a toothpick inserted into the center comes out clean.

  7. Cool and Unmold:
    Once the cake has finished baking, remove it from the oven and allow it to cool in the pan for a few minutes. Let the cake cool completely before attempting to remove it from the pan. Carefully peel off the parchment paper from the sides and bottom of the cake.

  8. Serve:
    Gently invert the cake onto a serving plate, being careful not to disturb the orange slices on top. Allow the cake to rest for a moment to allow the natural juices from the oranges to soak into the cake. Your Orange Upside-Down Cake is now ready to enjoy!
