Instructions
Step 1: Prepare the Pastry
Start by preparing the pastry for the tartlets. In a small bowl, dissolve the brown sugar in the water by stirring gently with a teaspoon. Next, place the all-purpose flour, baking powder, and a pinch of salt in the bowl of a stand mixer fitted with the paddle attachment. Mix briefly to combine the dry ingredients.
Add the dissolved sugar water mixture into the dry ingredients. Scrape the seeds from the vanilla pod and add them to the mixture. Using the stand mixer, work the ingredients together until you obtain a smooth dough.
Once the dough is ready, transfer it to a lightly floured work surface. Roll it out to a thickness of about 3mm (⅛ inch).
Step 2: Shape the Tartlet Shells

Once the tartlet shells and creams have cooled, it’s time to assemble. Transfer both the vanilla cream and the chocolate cream into piping bags.
Pipe a layer of vanilla cream into the first four tartlet shells. Smooth the surface using a spoon or the back of a knife. Top with fresh blackberries that have been dusted with powdered sugar for extra sweetness. Decorate with almond flakes for a delightful crunch.
For the remaining tartlets, pipe the chocolate cream into the shells, smoothing the surface as before.
