Chickpea Baked Frittata

Cow’s milk ricotta 150g
Roma tomatoes 180g
Fennel seeds 1 teaspoon
Red onions 70g
Fresh chili pepper Half
Frozen peas 150g

Instructions

  1. Prepare the ingredients:
    Begin by prepping all the ingredients. Peel and finely chop the red onion. Wash the tomatoes, then cut them into small cubes. Finely chop the parsley, thyme, and half of the fresh chili pepper (about one teaspoon).

  2. Sauté the vegetables:
    In a large skillet, heat three tablespoons of extra virgin olive oil. Add the chopped onion and chili pepper. Sauté for a couple of minutes until the onions soften. Add the chickpeas (drained and rinsed under cold water) and the peas (previously thawed). Stir and cook over medium heat for about 10 minutes, allowing the vegetables to soften and flavors to combine.

  3. Prepare the egg mixture:
    Crack the eggs into a large bowl and beat them well with a whisk. Once the eggs are smooth, add the ricotta cheese, finely chopped parsley, and thyme. Season the mixture with salt and pepper to taste.

  4. Set up the baking dish:
    To make the frittata easier to handle, rinse a sheet of parchment paper under running water and wring it out. Place the parchment paper into a 28cm diameter baking dish, ensuring it fits snugly.

  5. Assemble the frittata:
    Pour the egg and ricotta mixture over the sautéed vegetables in the baking dish. Scatter the chopped fennel seeds over the top for an extra burst of flavor.

  6. Bake the frittata:
    Preheat the oven to 190°C (375°F) using the fan-assisted setting. Place the baking dish in the oven and bake for 60 minutes, or until the frittata is golden and set in the middle.

  7. Serve:
    Allow the frittata to cool to room temperature before slicing it into wedges or squares. Serve and enjoy!
