Prepare the Leeks
Start by trimming the leeks: cut off the root ends and the tough green parts. Slice the leeks lengthwise to remove the outermost leaves. Then, cut them into three equal parts. -
Wrap with Prosciutto
Take each leek section and wrap it tightly with a slice of prosciutto crudo. The prosciutto will add a savory flavor that complements the sweetness of the leeks. -
Make the Parmesan Cream
In a small saucepan, melt the butter over medium-low heat. Once melted, add the sifted flour all at once, stirring constantly to create a smooth paste (roux). Gradually pour in the room-temperature cream in small batches, mixing well after each addition. Season the mixture with salt and pepper to taste. Stir in 25g of grated Parmigiano Reggiano. Continue to cook the sauce on medium heat, stirring occasionally, for about 4 minutes until the sauce thickens. -
Assemble the Dish
Preheat the oven to 180ยฐC (350ยฐF). Pour the Parmesan cream into the bottom of a baking dish large enough to fit the leek sections. Place the wrapped leeks on top of the cream, arranging them neatly. -
Finish the Dish
Sprinkle the remaining 5g of grated Parmigiano Reggiano over the top of the leeks. This will add an extra cheesy crust as the dish bakes. -
Bake and Serve
Bake in the preheated oven for about 10 minutes, or until the prosciutto becomes crispy and golden. Serve hot as a flavorful appetizer, perfect for any occasion.
