Stuffed Turkey Roll-Ups with Champignon Mushrooms

Instructions:

  1. Prepare the sausage: Start by preparing the sausage. Cut along the casing to easily slide it off. Then, break it apart with a fork in a bowl until it becomes a crumbled, fine texture. Season the sausage with finely chopped parsley, salt, and black pepper to taste. Stir until the mixture is uniform and smooth, making it easy to spread.

  2. Prepare the mushrooms: Clean the champignon mushrooms by removing the more earthy part of the stem. Wipe them with a dry cloth or a slightly dampened cloth to remove any dirt. Slice the mushrooms thinly. Set aside 300g of mushrooms to use as a side dish, and reserve 100g to stuff the turkey roll-ups.

  3. Slice the cheese and bacon: Cut the scamorza cheese into thin slices, and prepare the bacon slices by cutting them into pieces that will fit inside the turkey rolls.

  4. Prepare the turkey: Place each turkey slice between two sheets of parchment paper and use a meat mallet to flatten it to an even thickness. Cut each flattened turkey slice in half.

  5. Assemble the rolls: Spread the sausage mixture on one side of each turkey slice. Add a few slices of scamorza cheese, followed by some sliced champignon mushrooms. Top with two slices of bacon. Secure everything in place by using toothpicks to hold the rolls together.

  6. Cook the roll-ups: In a large skillet, heat olive oil over medium heat. Add the garlic clove, lightly crushed, and cook until fragrant. Next, add the turkey roll-ups and sear them on all sides, ensuring they are evenly browned and cooked through.

  7. Add the remaining mushrooms: Once the turkey is nicely browned, add the remaining 300g of mushrooms to the pan. Season with salt and pepper to taste. Pour in the vegetable broth, allowing it to simmer for a few minutes to create a flavorful sauce.

  8. Cover and finish: Cover the skillet with a lid, lower the heat, and let the roll-ups cook for an additional 5 minutes. This will help the flavors meld together and ensure the turkey is fully cooked.

  9. Serve: Once the turkey roll-ups are cooked through and the mushrooms have softened, remove the toothpicks and serve the stuffed turkey roll-ups hot, with the mushrooms and sauce from the pan as a delicious accompaniment.
