Instructions
Step 1: Prepare the Crepe Batter
Start by cracking the eggs into a large mixing bowl and beat them lightly with a fork. Add the milk and mix again. Sift the flour into the bowl with the eggs and milk, then add a pinch of salt. Use a whisk to stir the mixture until it becomes smooth and homogeneous.
Cover the bowl with plastic wrap and refrigerate the batter for at least 30 minutes to allow it to rest.
Step 2: Cook the Crepes
After the batter has rested, heat a non-stick crepe pan and lightly grease it with butter. Once the pan is hot, pour in a ladle of the crepe batter, spreading it evenly across the surface of the pan. Cook the crepe for about 1 minute on medium-low heat, until the edges begin to lift.
Flip the crepe using a spatula and cook for another minute on the other side. Remove the crepe from the pan and set it aside on a plate. Continue cooking the remaining crepes with the rest of the batter. You should end up with about 15 crepes, each about 20 cm in diameter. Set them aside.
Step 3: Sauté the Zucchini
While the crepes are cooking, prepare the sautéed zucchini. Start by washing and drying the baby zucchinis. Trim off the ends and slice them into thin rounds, approximately 2 mm thick.
In a non-stick skillet, heat the olive oil and gently brown the garlic clove. Once the garlic becomes aromatic, add the zucchini rounds. Sauté the zucchini over high heat for about 5 minutes, stirring occasionally. Season with a pinch of salt, then remove the garlic. Before finishing, chop the parsley and stir it into the zucchini for added flavor.
Step 4: Assemble the Crepes
Take one crepe and spread a generous layer of Stracchino cheese on one half of the crepe using a spatula. Place a portion of the sautéed zucchini on top of the cheese. Next, roll the crepe from the side that is not filled, ensuring the zucchini and cheese are securely wrapped inside.
Repeat the process with the remaining crepes.
Step 5: Serve
Once all the crepes are rolled and filled, cut them in half and serve them warm. Enjoy the crepes while they’re still slightly warm, allowing the rich flavors of the Stracchino and the tender zucchini to meld together perfectly.
This dish is a delightful combination of savory crepes, creamy cheese, and lightly sautéed zucchini, making it an excellent choice for a satisfying main course. The addition of ham adds a wonderful savory depth, making these crepes even more indulgent.
