Instructions
To prepare the Turkey Roll-Ups in Tomato Sauce, start with the filling. Clean the broccoli rabe by removing the tough stems, keeping the tender leaves. Rinse them well under running water and then set them aside to drain.
Next, prepare the Fontina cheese. Cut off the rind and slice it into thin pieces. Then, cut the slices into sticks and finally into small cubes, roughly 0.5 cm in size.
Now, focus on the turkey. From a whole turkey breast, slice it into 8 pieces, each about 1.5 cm thick. On each piece of turkey, place a small amount of Fontina cheese. Carefully roll each slice to create a tight roll and secure the roll with a toothpick.
Move to the stove. In a large pot, heat a drizzle of extra virgin olive oil over medium heat. Add the garlic clove (with its skin on) and a sprig of rosemary. Let them infuse the oil as the pot heats up. Once the oil is hot, gently place the turkey roll-ups into the pot.
Allow the roll-ups to brown on all sides, ensuring they are sealed well. Once they’re browned, pour in the tomato pulp, seasoning with salt and pepper to taste. Add a cup of water and stir gently. Cover the pot with a lid and reduce the heat to low. Let the roll-ups simmer for about 30 minutes, occasionally shaking the pot to prevent the roll-ups from sticking to the bottom. Be sure to check that they don’t dry out during cooking.
Once the turkey is cooked through and tender, remove the lid and give everything a final shake. Serve the turkey roll-ups hot with the savory tomato sauce, ensuring each bite is packed with juicy turkey, creamy cheese, and the aromatic flavors of rosemary and garlic. Enjoy this delicious, hearty dish!
