Ingredients

Ingredient Quantity
Butter 140g
All-purpose flour (00 type) 300g
Potato starch (fecola) 100g
Sugar 220g
Vanilla pod 1
Baking powder 1 tsp
Whole milk 100ml
Lemon zest 1
Orange zest 1
Eggs 4
Food coloring As needed
Powdered sugar As needed

Instructions

  1. Prepare the Base: Start by preheating your oven to 180ยฐC (350ยฐF) and greasing a round cake pan. In a large mixing bowl, cream together the softened butter and sugar. Add the vanilla seeds from the pod, followed by the lemon zest and orange zest for a refreshing citrus aroma.

  2. Combine Dry Ingredients: Sift together the all-purpose flour, potato starch, and baking powder into the mixture. Stir well to combine until you have a smooth, creamy dough.

  3. Add Wet Ingredients: Gradually pour in the milk at room temperature while continuing to mix the ingredients. You should achieve a thick but smooth batter at this point.

  4. Divide and Color the Batter: Divide the batter into four equal portions. Leave one portion as it is (this will be your natural color). To the remaining three portions, add a small amount of food coloring to eachโ€”choose colors of your choice. This will give your cake its signature rainbow layers!

  5. Layer the Cake: Begin by spooning a portion of the batter into the center of the cake pan, allowing it to spread out slightly. Then, take another color and place a spoonful of it in the center of the first, letting it slowly spread to cover it. Continue this process with the remaining colors until you have used all the batter and have a colorful layered effect.

  6. Bake the Cake: Place the pan in the preheated oven and bake for 50 to 60 minutes, or until a toothpick inserted into the center of the cake comes out clean. Every oven is different, so be sure to keep an eye on the cake as it bakes.

  7. Cool and Decorate: Once baked, remove the cake from the oven and let it cool in the pan for a few minutes. Then, transfer it to a cooling rack to cool completely. When the cake has cooled, dust it with a light coating of powdered sugar for an elegant finish. If you want to make it even more festive, feel free to decorate the cake with colorful cake sprinkles or edible decorations.

This Harlequin Cake is perfect for any celebration or as a sweet treat to brighten up your day. The layers of vibrant colors not only make it visually appealing but also give it a light, airy texture that is sure to delight all who taste it. Enjoy this showstopper of a dessert!
