Instructions:

Begin by boiling the potatoes in water until they are nearly cooked through. Drain them and set them aside to cool slightly before peeling.

While the potatoes are boiling, prepare the sauce. Thinly slice the golden onion and place it in a pan with a drizzle of extra virgin olive oil. Sauté the onions on medium heat until they become golden brown and soft.

Add the tomato passata to the pan with the onions, and season with salt to taste. Allow the sauce to simmer gently, stirring occasionally to prevent sticking.

Once the potatoes are ready and peeled, slice them into thick rounds. Carefully coat each potato slice in all-purpose flour, ensuring an even layer.

Now it’s time to assemble the dish. Using a round baking ring or an oven-safe mold, begin placing the floured potato slices around the edge of the mold, overlapping slightly (about 10-11 slices per layer).

After layering the potatoes, spoon a portion of the tomato sauce with onions over the potatoes, spreading it evenly.

Sprinkle about half of the mozzarella cubes over the sauce, ensuring it’s well distributed.

Add the remaining tomato sauce mixture on top, ensuring it covers the entire surface of the potatoes.

Grate the Parmigiano Reggiano over the top, generously covering the surface for a rich, golden finish.

Garnish with a few fresh basil leaves for an aromatic touch.

Preheat your oven to 200°C (static mode). Place the assembled potato pie into the oven and bake for approximately 25 minutes, or until the top is golden and bubbling.
