Extra virgin olive oil 2 tbsp
Tahini 1 tbsp
Fresh parsley 1 bunch
Sweet paprika 1 tsp
Fine salt to taste
Black pepper to taste

Lemon juice ½ lemon

Instructions

  1. Prepare the Lentils: Begin by checking if the dried lentils you are using need soaking. If so, place them in cold water and let them soak for 7-8 hours. After soaking, drain the lentils and rinse them thoroughly.

  2. Cook the Lentils: Transfer the rinsed lentils into a large pot. Cover them with fresh water and cook over medium heat for approximately 45 minutes, or until they are tender and soft.

  3. Blend the Hummus: Once the lentils are cooked, drain them and place them into a blender or food processor. Add the garlic, parsley, tahini, sweet paprika, lemon juice, olive oil, salt, and black pepper.

  4. Blend to Perfection: Blend the mixture on high for about 1 minute, or until it forms a smooth, creamy texture.

  5. Serve: Once blended, transfer the lentil hummus to a serving dish. Garnish with additional parsley, a sprinkle of paprika, or a drizzle of olive oil if desired. Serve with pita bread, vegetable sticks, or as a spread for sandwiches.
