Sweet Rice Fritters with Lemon Aroma

Carnaroli Rice 300g
Raisins 80g
Lemon Zest 1
Ground Cinnamon 1 pinch
All-Purpose Flour 60g
Eggs 2
Sugar 30g
Peanut Oil (for frying) as needed
Granulated Sugar (for coating) as needed

Instructions:

  1. Begin by cooking 300g of Carnaroli rice. Once cooked, transfer the rice into a large mixing bowl.

  2. Add two small eggs, 60g of all-purpose flour, the zest of one lemon, a pinch of ground cinnamon, 30g of sugar, and the raisins (previously soaked in warm water). Mix everything together thoroughly until you achieve a soft yet compact dough-like consistency.

  3. Once well combined, cover the bowl and let the dough rest for at least 30 minutes in a cool place. This resting time allows the flavors to meld together and the dough to firm up slightly.

  4. In the meantime, heat peanut oil in a deep frying pan over medium heat. The oil should be hot but not smoking.

  5. Once the oil reaches the right temperature, use a spoon to drop small portions of the dough into the hot oil, forming fritters. Fry them gently, turning occasionally, until they are golden and crispy on both sides.

  6. When the fritters are perfectly golden, remove them from the pan with a slotted spoon and immediately roll them in granulated sugar to coat them evenly.

  7. Serve the rice fritters warm, ideally when they are still slightly warm. These fritters are deliciously fragrant with lemon and cinnamon, making them a perfect treat for any sweet craving.
