Spiced Apple Compote Recipe

Instructions:
Before you begin preparing your spiced apple compote, it’s essential to sterilize the glass jars you’ll use for storing the compote. While you’re making the preserve, ensure that the jars are still warm when you fill them. For instructions on sterilizing jars, please refer to the guidelines provided by the Ministry of Health, which can be found at the bottom of the recipe.

Sterilizing the Jars:
- Wash the jars thoroughly under running water. Check for any cracks or chips to ensure they are safe to use.
- Line a large pot with a clean kitchen towel, and place the jars inside, ensuring the openings face upwards.
- Wrap the jars with one or more dish towels to keep them secure.
- Fill the pot with enough water to cover the jars, and bring it to a boil. Once boiling, reduce the heat to a simmer and let the jars remain in the pot for about 30 minutes.
- For the last 10 minutes, immerse the lids in the water.
- Keep the jars in the hot water until you’re ready to fill them with the compote.

Preparing the Spiced Apple Compote:
- While the jars are being sterilized, begin preparing the spiced apple compote. Wash and peel the apples.
- Cut the apples into small chunks and transfer them to a deep saucepan.
- Add the sugar, cardamom pods, and a pinch of ground ginger to the saucepan, along with a few cracks of black pepper to enhance the spice.
- Stir the mixture gently with a spatula to ensure the apples absorb the flavors from the sugar and spices.
- Place the saucepan on medium heat and cook the apples until the mixture reaches a temperature of 108°C (use a kitchen thermometer to check the temperature).

Filling the Jars:
- Once the compote has reached the right consistency, carefully remove the sterilized jars from the pot.
- While the compote is still hot, pour it into the jars, filling each one up to about 1 cm below the rim.
- Seal the jars by screwing on the lids firmly, but not too tightly.

- Allow the jars to cool completely before storing them in a cool, dark place.
