Brustengo (Savory Italian Frittata)

Instructions
To make the brustengo, begin by preparing the batter. In a bowl, add the flour along with a pinch of salt, then slowly pour in the water, whisking constantly to prevent any lumps from forming.
Next, place a non-stick pan (approximately 25 cm in diameter) on the stove over medium heat. Add the extra virgin olive oil and allow it to heat for a couple of minutes.
Once the oil is hot, pour in the batter, spreading it evenly to cover the bottom of the pan. Allow it to cook for about 10 minutes, or until the edges begin to lift slightly. You can gently use a spatula to lift the edges to check that the underside is golden and cooked through.
Once the first side is cooked, carefully flip the brustengo to cook the other side for another 4-5 minutes. When both sides are golden brown and crispy, transfer the brustengo onto a cutting board. Immediately sprinkle the top with the grated Pecorino cheese.
Slice it into 8 wedges and serve hot, garnished with pieces of prosciutto crudo. Enjoy this delicious savory Italian treat as a light appetizer or a snack!
