Lonza a Beccafico (Pork Tenderloin Rolls)

Category: Main Course
Serves: 4

Ingredients:

Ingredient Quantity
Pork Tenderloin 800g
Orange Juice ½
Honey 2 tbsp
Bay Leaves To taste
Chili Powder To taste
Breadcrumbs 50g
Raisins 25g
Pine Nuts 25g
Sugar 15g
Anchovies (in oil) 2 fillets
Parsley To taste
Salt A pinch
Black Pepper To taste
Extra Virgin Olive Oil To taste

Instructions:

  1. Prepare the Filling:
Start by making the filling for your pork tenderloin rolls. In a frying pan, heat a small drizzle of extra virgin olive oil. Add the breadcrumbs and toast them lightly until golden brown. Set them aside to cool slightly.

  2. Soak the Raisins:
While the breadcrumbs are cooling, soak the raisins in warm water to plump them up, then drain them thoroughly.

  3. Prepare the Mixture:
In a large bowl, combine the golden breadcrumbs, soaked raisins, finely chopped parsley, and the anchovies that have been finely chopped. Add the sugar, salt, and black pepper to taste, and mix everything well using a fork.

  4. Roll the Tenderloin:
Lay the pork tenderloin flat and spread the filling evenly across its surface. Roll the tenderloin tightly into a log shape, securing it by tying it with kitchen twine or using toothpicks.

  5. Flavor and Roast:
Place half a bay leaf between each rolled portion to infuse the meat with a delicate aroma. Drizzle the rolls with a bit of extra virgin olive oil and freshly squeezed orange juice. Sprinkle the remaining filling on top. Finally, season the rolls with chili powder, adjusting the amount based on your spice preference.

  6. Cooking:
Preheat your oven to 200°C (390°F) in static mode. Place the pork rolls on a baking sheet lined with parchment paper and bake for about 20 minutes, or until the pork is cooked through and golden on the outside.

  7. Serve and Enjoy:
Once the Lonza a Beccafico is finished baking, remove it from the oven and let it rest for a few minutes. Slice the rolls into thick portions and serve with a garnish of fresh parsley or additional orange zest if desired.

This recipe for Lonza a Beccafico offers a delightful combination of sweet and savory flavors with the richness of tender pork, a touch of orange, and the sweet depth of raisins and honey. Perfect for a special dinner or gathering, this dish pairs wonderfully with roasted vegetables or a light salad. Enjoy!
