Instructions
To prepare this delicious beef tartare on bruschetta, follow these simple yet flavorful steps:
1. Prepare the Bruschetta
- Start by slicing the baguette into diagonal pieces about ½ cm thick. If you have cannoli molds, they can be used as a guide for uniform size.
- Drizzle the baguette slices with a generous amount of extra virgin olive oil and sprinkle with oregano for an extra layer of flavor.
- Preheat your oven to 190°C (375°F), and toast the baguette slices in the oven for approximately 10 minutes, or until golden and crispy. Once done, remove them from the oven and allow them to cool slightly, but they should still be warm when served.
2. Prepare the Beef Tartare
- While the bruschetta is toasting, take your fresh beef tenderloin and place it on a clean cutting board. Trim off any excess fat, ensuring you only have lean meat.
- Cut the beef into thin strips, and then into small cubes. With a sharp knife, finely chop the cubes into a smooth, almost minced texture, tapping the knife down gently on the cutting board to finely mince.
- Transfer the minced beef into a bowl. Add the extra virgin olive oil, a pinch of sea salt, freshly ground black pepper, and finely chopped chives. Mix everything together thoroughly to ensure the flavors meld.
3. Prepare the Mustard Sauce
- In a small bowl, squeeze the juice from half a lemon.
- Add Dijon mustard to the lemon juice, followed by the acacia honey. Stir well to combine until the sauce becomes smooth.
- If you like a bit of heat, add a few drops of Tabasco® or your preferred hot sauce, adjusting to taste.
4. Assemble the Tartare on Bruschetta
- Place the toasted baguette slices on a serving platter, with the concave side facing up to create a little well to hold the beef tartare.
- Spoon a generous amount of the prepared beef tartare onto each slice of bruschetta.
- Drizzle a few drops of the mustard sauce over the tartare to add a tangy and sweet contrast to the rich beef.
- Garnish with additional chives or a sprinkle of freshly ground black pepper if desired.
