Sterilizing the Jars
Begin by sanitizing the jars and lids that will hold your jam. Clean the jars thoroughly with running water, then heat them in a pot of water over low heat for about 20 minutes to sterilize. After 20 minutes, add the lids and let them boil for an additional 10 minutes. Turn off the heat and let the jars and lids cool. -
Preparing the Figs
While the jars are cooling, wash the figs thoroughly and remove the stems. Peel the figs and cut them into quarters, setting them aside. -
Preparing the Lemon
Peel the lemon using a vegetable peeler, making sure to keep the peels. Cut the lemon in half, and set it aside to be added later. -
Cooking the Jam
Place the prepared figs, lemon, sugar, and water into a large pot. Stir the mixture, bringing it to a gentle boil. Allow it to cook, stirring occasionally to avoid burning. Use a kitchen thermometer to monitor the temperature. When the jam reaches 104°C (219°F), remove it from the heat. -
Skimming the Surface
At this stage, a thin skin will form on the surface of the jam. Stir the skin into the jam to ensure smooth consistency. -
Filling the Jars
Carefully pour the warm fig jam into the sterilized jars using a jam funnel to avoid spills. The heat from the jam will create a vacuum seal in the jars, helping to preserve the jam for a long time. -
Cooling and Checking the Seal
Let the jars cool to room temperature. Once they are completely cool, check the vacuum seal. Press down on the center of the lid; if you don’t hear the classic “click-clack” sound, the seal has been formed successfully. -
