Prepare the Broth
Start by placing two peeled and halved carrots, one onion studded with cloves, the bay leaves, rosemary, thyme, and black peppercorns into 1.5 liters of water. Bring to a boil and cook for about 20 minutes, allowing the flavors to infuse into the broth. -
Cook the Chicken
Once the broth reaches a boil, season it with salt and add the chicken breast. Allow the chicken to cook for around 20 minutes, or until it is fully cooked and white all the way through. Remove the chicken from the broth and set it aside to cool. -
Prepare the Chicken
After the chicken cools, remove the bones and cartilage. Shred the chicken into small pieces. -
Blend the Chicken
Using a food processor or blender, finely chop the chicken with a small amount of broth (about half a cup). This will ensure a smooth consistency for your soup. -
Strain the Broth
Strain the chicken broth through a fine sieve to remove the vegetables and herbs, then set the clear broth aside. -
Make the Creamy Base
In a saucepan, crumble the soft white bread (Pancarrè) and add it to half a liter of the chicken broth. Heat over low to medium heat, stirring continuously until the bread absorbs the broth and thickens. Add the shredded chicken to the mixture and stir well to combine. Smooth the Soup
Return the mixture to the blender and blend it until smooth and velvety, eliminating any lumps. -
Finish the Soup
Add the fresh cream to the blended soup, mixing it in thoroughly. You can also drizzle a little extra virgin olive oil for added richness, if desired. -
