Crispy Salmon and Potato Croquettes with Yogurt Sauce

Category: Appetizers
Servings: 20 pieces

Ingredients:

Ingredient Quantity
Potatoes 800g
Smoked Salmon 200g
Lime Zest 1
Egg 1
Potato Starch 20g
Bread 50g
Dill 2 sprigs
Salt 1 pinch
Black Pepper to taste
Nutmeg to taste
Breadcrumbs 150g
Eggs 2
Salt 1 pinch
Greek Yogurt 200g
Curry 2g
Salt 1 pinch
Vegetable Oil 1L
Mixed Salad Leaves 200g

Instructions:

To create these Crispy Salmon and Potato Croquettes with Yogurt Sauce, begin by thoroughly washing the potatoes under fresh cold water. Next, place them in a pot of salted water over medium heat. Once the water nears a boil, reduce the heat and cook the potatoes gently with their skins on. After they are tender, pass them through a potato ricer or mash them in a bowl until smooth.

Finely chop the dill and add it to the mashed potatoes. Season with a pinch of salt and pepper, then stir in the freshly grated lime zest. For an extra aromatic kick, grate a touch of nutmeg into the mix. Now, slice the smoked salmon into thin strips and add it to the potato mixture. Mix everything together with your hands until well combined.

Next, form the mixture into small croquettes. You should aim to make about 20 pieces. For each croquette, dip it first into the beaten egg to ensure an even coating, followed by a generous dusting of breadcrumbs. Repeat this process until all the mixture is used up.

In a wide pot or frying pan, heat the vegetable oil over medium-high heat. Fry the croquettes in small batches, being careful not to overcrowd the pan. Fry them for about 2 minutes on each side, or until they are golden and crispy. Use a slotted spoon to remove them from the oil and drain any excess oil on paper towels.

For the yogurt sauce, mix the Greek yogurt, curry powder, and a pinch of salt in a small bowl. Stir well until smooth and evenly flavored.

Finally, plate your Crispy Salmon and Potato Croquettes on a bed of mixed salad leaves, such as arugula or frisΓ©e, and serve with the yogurt sauce on the side for dipping.

These croquettes are the perfect appetizer to serve at any occasion, bringing together crispy, savory, and creamy flavors in each bite. Enjoy the delightful combination of soft mashed potatoes, smoky salmon, and a refreshing yogurt dip!
