Instructions

  1. Cook the Salmon:
    Start by heating a skillet over medium heat and drizzle a little extra virgin olive oil. Once the pan is hot, place the salmon fillets and cook for about 2-3 minutes on each side, until they are golden and slightly crispy. Season with salt and black pepper to taste. Remove from heat and set aside.

  2. Prepare the Ricotta Foam:
    In a separate bowl, sift the ricotta using a spatula and a fine sieve. Add the ground turmeric and a pinch of salt to the ricotta and mix thoroughly until smooth and well combined. Next, transfer the ricotta mixture into a siphon, seal the cap, and season with a bit more salt and pepper.

  3. Finish the Salmon:
    With the salmon fillets cooked, pour the thyme honey into the pan and let it simmer for a minute or two, allowing the honey to glaze the salmon beautifully. Then, deglaze the pan with a ladle of water, stirring to incorporate any flavorful bits left from the salmon. Allow the sauce to reduce slightly.

  4. Assemble the Dish:
    On each plate, arrange a few fresh lamb’s lettuce leaves as a bed for the salmon. Place the salmon fillets on top of the greens, then drizzle the honey glaze over the top. Finally, using the siphon, add a dollop of ricotta foam beside the salmon to elevate the dish with a creamy texture.
