Sweetened condensed milk 200g
Eggs 160g
Egg yolks 42g

Vanilla bean pod 1

Instructions:

  1. Prepare the Caramel:
    Begin by making the caramel. In a small saucepan, pour in the water and add the sugar for the caramel. Heat over medium heat and stir gently until the sugar dissolves. Let the sugar boil without stirring until it turns into a deep amber color. Be patient, as this will take a few minutes. Once it reaches the right color, remove the pan from heat and quickly immerse the bottom of the pan in a bowl of cold water to stop the caramel from cooking further. Be careful not to let any water touch the caramel.

  2. Prepare the Flan Mixture:
    While the caramel is cooking, get the flan mixture ready. In a mixing bowl, combine the whole eggs, egg yolks, and sugar. Scrape the seeds from the vanilla bean and add them to the mixture. Next, pour in the whole milk and sweetened condensed milk. Use a whisk to combine everything well, ensuring the mixture is smooth and well-blended.

  3. Assemble the Flan:
    Carefully pour the caramel into the bottom of individual flan ramekins or a larger baking dish. Be cautious as the caramel is very hot. Once the caramel is in place, gently pour the flan mixture over it.

  4. Bake the Flan:
    Preheat the oven to 160°C (320°F) and place the ramekins or baking dish in the lower rack of the oven. Bake for about 50 minutes. The flan is ready when it has set and has a firm texture but is still slightly wobbly in the center.

  5. Cool and Serve:
    Once baked, remove the flan from the oven and let it cool to room temperature. For easier serving, place the flan in the fridge for a few hours to fully set. When ready to serve, run a knife around the edges of the flan to loosen it, then flip it onto a dessert plate. The caramel will now be on top, giving the flan its delicious golden finish.

Tip: For an extra touch, you can garnish with fresh fruit or whipped cream. Enjoy your homemade flan!
