Instructions:
-
Prepare the Zucchini Base:
- Start by grating the Caciocavallo cheese and set it aside.
- In a large bowl, crack the 4 eggs and whisk them together with the grated Caciocavallo cheese.
- Grate one zucchini and add it to the egg mixture, along with a pinch of fresh thyme, salt, and black pepper. Mix everything well until fully combined.
-
Cook the Base:
- Line a rectangular baking tray (35×27 cm) with parchment paper. Drizzle a bit of olive oil on the bottom and spread it evenly.
- Slice the second zucchini thinly, after washing and drying it. Arrange the zucchini slices in a decorative pattern on top of the egg mixture. Sprinkle some fresh thyme on top of the zucchini slices.
- Bake the zucchini base in the preheated oven until it is firm and lightly golden. Once done, allow it to cool for about 30 minutes at room temperature or, if in a hurry, refrigerate it for about 15 minutes.
-
Prepare the Filling:
- While the base is cooling, prepare the filling. In a bowl, combine the drained Ricotta cheese and Grana Padano cheese.
- Season the mixture with salt, pepper, and a touch of olive oil to create a creamy texture.
- Stir in a handful of fresh arugula, chopped sun-dried tomatoes, and a sprinkle of toasted sliced almonds for added crunch and flavor.
-
Assemble the Roll-Up:
- Once the zucchini base has cooled, spread the ricotta and arugula mixture evenly across the surface.
- Gently roll the zucchini base into a tight log, ensuring all the filling is enclosed inside.
-
Serve:
- Slice the roll-up into even portions and arrange on a serving platter.
- Garnish with a few extra toasted almonds, a drizzle of olive oil, and some fresh arugula if desired.
Tips & Variations:
- For a more robust flavor, consider adding a little garlic powder or fresh herbs like basil or oregano to the ricotta filling.
- This dish can also be served as an appetizer by slicing it into smaller, bite-sized pieces.
- For a vegan version, swap out the cheeses for dairy-free alternatives and use flax eggs in place of the regular eggs.
Enjoy your delicious Zucchini Roll-Up, a delightful and healthy dish perfect for any occasion!
